Looking to download Ubuntu, what should I be downloading?

I tried to switch to Ubuntu a few months ago and downloaded it from somewhere, I did not realize at that time that Ubuntu had a dedicated website. I downloaded some Ubuntu 12 or something and was able to get it installed and working but never could get it to work right and then was unable to figure out how to get it off of my computer. It was a tad vexing, but I eventually figured it out, I have been using that as a means of partitioning and working with hard drives ever since, some handy features in there.

In the mean time I reinstalled windows 8 on my laptop, which it came with but some of the drivers would not install properly, it took some time but after 6 installations and going every trick I could find I finally realized that my computer originally had windows 7, it was simply upgraded to win 8 and then sold to me at the store. With this in mind I installed windows 7 and everything installed beautifully, all drivers work and the computer runs far better than it ever did as a windows 8 system. I have been dealing with the headaches of windows 8 and windows 10 on several of our home computers and I have decided that I am done with windows, this means that I need to setup and learn Ubuntu....

Last time around I simply jumped in downloaded the first thing I found and went with it.... As I began to have troubles I learned very quickly that I had made a number of mistakes. I realized that I needed to do some amount of study the next time around (now) before even downloading Ubuntu and know what I am doing before I act, rather than simply reacting to what I have already done...

The first step is deciding what I need to download...

I see these options...

Ubuntu Server 16.04.1 LTS.................. This appears to be the most common at a guess and likely what I would be downloading...

Ubuntu cloud.................. I do not know what this is, my guess was something relating to cloud data storage, of which I have no interest in nor use for.

Ubuntu Kylin................... I do not read or speak Chinese so this would not likely apply well to me I don't imagine.....

Ubuntu core.................... I have no need of Cloud applications and I will never have any devices so support for those is unnecessary..

Ubuntu flavors.................Choices of default applications and settings backed by full Ubuntu....

My initial guess as to the most appropriate to me and my needs is going to be Ubuntu flavors, number two guess would be Ubuntu server....

The computer that I am setting this up on first is...

Dell Inspiron 3520... Intel Core i3 2350M quad core @ 2.4 Ghz x 4.. ... Intel HD graphics 3000.. 1.6 Gigs video memory.... 4 Gigs RAM... 500 Gig hard drive...

I could find some more specs by looking through my driver data base and could likely identify wireless and some other features of this computer, seems unlikely to be important to the choice of installation at this time though.....

I would assume that as before there are some other programs that will be needed or at the very least useful to have and use with Ubuntu, can anyone offer up a list of programs one might want to run along with Ubuntu?

Right off the bat I assume that WINE would be a needed or at the very least a useful component to add..

At this point I am open to suggestions and advice... I am looking to run at the present time anyways a dual boot system with windows 7 and Ubuntu. If with some work I can get all windows programs or equivalents to run on Ubuntu then I may simply go straight Ubuntu.....

First things first though... which Ubuntu do I download?..... List of other software that I should install with Ubuntu?.....
